Pom & avocado cucumber mint salad

February 15th, 2010

Perfect to crunch through in this hot weather. There is such a short window in summer of enjoying this spectacular fruit (pomegranate), and I’ve discovered that if I buy a whole lot at once (like 10) and have an hour or so extracting the seeds, that I can enjoy little frozen jewels for weeks. I [...]

Mango mint madness for a moist summers day

February 15th, 2010

It is HOT… not only is it hot it is humid too…. since when is Sydney at 90-96% humidity for days on end? Thank goodness for the rains to break the cycle over the weekend.. and yet, suddenly I feel as if our whole city has up and migrated to the tropics.
Eating food seems such [...]

Smoked trout and ricotta morsels with pomegranate on cucumber

December 14th, 2009

Smoked trout has a slightly milder taste than smoked salmon, and in fillets like this, a delicious meaty texture. Trout is an oily fish and as such, an excellent source of Omega-3 fatty acids. Cucumber and pomegranate are great sources of vitamins, and the soft ricotta (one of the lowest fat cheeses) is a delicious [...]

Mango on coconut water granita

Passionfruit curd & the Agave syrup story

September 28th, 2009

What to do with winter’s last gift to us: piles of passionfruit from the vine, ready to eat? I was inspired by a recipe for passionfruit butter on Souvlaki for the Soul. I replaced the caster sugar with low GI dark agave syrup. Agave syrup is higher in fructose than glucose, which is why it [...]

Buffalo Mozzarella with basil and tomato

July 20th, 2009

Buffalo mozzarella bears no resemblance whatsoever to the food labelled “mozzarella” you will find on supermarket shelves which is yellow and hard. This soft white cheese is more like bocconcini, though much bigger in size, and makes a scrumptious entre flavoured simply with basil and tomato, or even just tomato.
I thought the word “buffalo” indicated [...]

Apple cake with banana, coconut and ricotta topping

July 12th, 2009

One of the most disappointing things about being on a diabetic diet is missing out on things. Saying no to rich desserts is fine most of the time-particularly if the blood sugar spike makes you feel unwell. There are some occasions though, like birthdays, when it is nice to be able to have a piece [...]

Baked lemon and ricotta cheesecake

July 6th, 2009

Cheesecake … low GI? Low fat? Ok for a diabetic diet? You wouldn’t think so, but in small serves, and by altering the ingredients a little, you can make a very tasty dessert. Cheesecake is normally made with cream cheese, cream, eggs, sweet biscuits and butter with variations.
I’ve changed the cream cheese to ricotta, the [...]

Sourdough toast with ricotta and pear

June 26th, 2009

Choose a wholewheat sourdough such as morpeth wholewheat and sesame stocked at Harris Farm stores and slice very thinly. The nutty sesame taste contrasts beautifully with the soft cheese and pear. Supermarket bought light ricotta is never as delicious as that you’ve purchased at your local delicatessen.
