Fruit salad

Exquisitely simple, yet so good. Don’t let anyone lead you to believe that the vessel you eat of does not make a difference to taste. I love putting something like this together in a cocktail glass for Dan – it makes that after dinner snack that little bit more special – who would have thought fruit salad and natural yoghurt could be so yummy!

Serves: 4

Preparation time: 5 minutes

Ingredients:

  • 1 blood orange
  • 1 mango
  • 1 banana
  • 1 kiwi fruit
  • 5 strawberries
  • 10 blueberries
  • 5 chopped mulberries
  • 1 pear
  • 4 scoops fat free, sugar free natural yoghurt
  • 8 pecans, chopped into small pieces

Method:

  • Chop the fruit into small pieces and mix together
  • Spoon into cocktail glasses
  • Top each serve with a scoop of yoghurt
  • Sprinkle with nuts

    If you're hoping to keep some back to have next day, omit the banana, as it goes slimy! Lovely for fruit salad to be eaten on the day, though.
