A very quick and easy substitute for tomato sauce. Check out the sugar content in all the sauce bottles… there just isn’t a version of tomato sauce which is low in sugar. The sugar and salt content preserves the tomato, so this one won’t last long – only make as much as you need for the day, or make a little more and freeze it, defrosting it at the time you need it. It’s a bit like a pasta sauce, only tangier due to the vinegar. Shown pictured here with our easy tuna and bean cakes.
Serves: 2
Preparation time: 2 minutes
Cooking time: 2 minutes
Ingredients
- 1/2 cup passata (tomato puree): check it is one with no added sugar, just tomatoes and salt.
- a few sprigs chopped coriander (cilantro) leaves
- 1 clove garlic, crushed
- a few strands saffron
- 1 tablespoon olive oil
- 1/4 teaspoon fennel seeds
- 1 tablespoon red wine vinegar
Method:
- Heat a small saucepan over a low heat
- Add the oil, garlic, saffron and fennel seeds
- Stir until the garlic turns golden and the seeds smell like they are toasting (30 seconds to 1 minute)
- Add the passata and red wine vinegar and cook for another minute
- Turn off heat and stir in coriander
- Add salt and pepper to your own tastes (add a little, try it, then add more if needed)
- Pour over whatever you are serving it with


Hi there, I just stumbled across your page in my hunt for low GI recipes. Just wanted to say the recipes look really good so I will definitely be back to try some out. I'm not diabetic but have PCOS and low GI is the only thing that works for me – so thank you!
Hi Chloe,Glad you plan to try some of the recipes! Yes I had heard low GI was the diet for PCOS as well. Really it is less of a diet and more of a lifestyle plan- wholegrain, and lots of fruit and veg being the main principle. It has certainly been working really well for us.
