About egg (Recipes below...)
“Although I cannot lay an egg, I am a very good judge of omelettes” George Bernard Shaw
Check out this great article “Benefits and risks of eggs in perspective“. The jury is no longer out about whether eggs are good or bad for those with high cholesterol. High Omega 3 good fats, and a whole range of essential vitamins and minerals, and of course protein, make eggs an excellent food for any diet. They are a source of fat soluble vitamins, AND the good fat in them helps you absorb these vitamins properly. With only 5 g of fat (1.6g saturated) per egg, they only make up about 1/10th of your daily fat requirements EVEN if you are a couch potato. Add this to their protein content, iron, folate, B12, D and E vitamins, and eggs really do pack a punch of goodness!
Check out this video on checking the “freshness of the eggs you buy!

Reminiscent of gingerbread, but with a delightfully fruity twist on top! I was hoping the mashed banana/ milk/ maple syrup combo would do the trick that brown sugar normally does for an upside down cake (no way I was using half a cup of sugar) — It didn’t caramelise in the way I had hoped. [...]

A tasty and nutritious mid morning snack which well and truly satisfies the mid morning craving for something filling and a little bit sweet. These muesli bars are very high in fibre and healthy fats (Nuts are high in Omega-3 fats). Much like eating a handful of nuts and fruit – only crunchy, and soooo [...]

The perfect way to start a weekend – I adapted our favourite banana pancakes recipe, this time sweetening the mixture with the grated apple. No added sugar, but it really doesn’t need it – round it off with piles of fresh fruit and some fat free, sugar free natural yoghurt. After that, all you need [...]

What to do with winter’s last gift to us: piles of passionfruit from the vine, ready to eat? I was inspired by a recipe for passionfruit butter on Souvlaki for the Soul. I replaced the caster sugar with low GI dark agave syrup. Agave syrup is higher in fructose than glucose, which is why it [...]

This recipe was inspired by some quick, cheap and tasty black-eyed-pea balls at an African restaurant called Le Kilimanjaro recently. Black eyed peas have a low GI (38-52) and a carbohydrate portion of 30g per 150g. They are high in fibre, magnesium, folate, iron and protein. I found a recipe for the traditional African version [...]

If, like my mum you are allergic to chocolate, you will know the pain of watching others eat chocolate fudge cake! When mum turned forty, I made a giant carob black forest cake for the party. This year, a smaller, apple based cake very similar to our pear fudge chocolate cake.
Melted carob drops, and after [...]

I have adapted this dark chocolate souffle recipe I found on a website titled “Cooking for Engineers“. The author of this site has a very interesting approach to recipe blogging – tabulating each recipe into a grid which can be printed.
To make it from the “good” fats, I skipped the butter and added an extra [...]

Perfect for a mid morning brunch, a lazy dinner on a Friday night, or a midnight snack after a late night out. A bit like bubble and squeak, this recipe makes use of what was left in a near empty fridge prior to shopping day! Check out our beans tag for more info about beans. [...]

Lentils, pumpkins and cannellini beans…who says just because mashed potato is high GI you can’t enjoy this classic dish! We actually think this version is BETTER than the original, and are once again, happy we started cooking with beans. My mum used to make a delicious lentil shepherd’s pie sourced from a book called “passion [...]

You’ll really thank yourself for making this one! This is my favourite low GI recipe so far. Do NOT tell your guests it is healthy, or you will find like I did that they hover around it, turn up their noses, feel slightly uncertain, and eventually try it, and then won’t believe you anyway! You’ll [...]

Inspired to try new beans, and after eating a delicious red bean and pork meal prepared by a friend Sandra, I decided to buy some red adzuki beans and experiment. Here is the first result! I browsed online for recipes for red bean cakes, and found this delightful blog called sugarlens, with a recipe for [...]

A Sunday night meal for when the pantry is low. Made from non-perishable food you can keep stocked in the pantry for when you run out of fresh ingredients! The smooth, creamy inside of these cakes along with the crispy crunchy coating goes perfectly with tomato sauce. But why eat sugary shop-bought sauce when my [...]
